On Our Table: Dinners of October, Part Two

Thankfully, the second half of October included its fair share of greens, but also featured such delicacies as turkey chili, homemade pizza, crispy chicken, and one of our favorite pasta dishes. I can barely believe the end of October is already here.

How are we already looking into the last two months of the year? I know everyone is anxious to move along to the new year, but in the meantime how about we cook and eat some really delicious food at the dining room table. Sounds good to me!

Here are the meals we made, and loved, during the second half of October. Key ingredients, and recipes, are included when available.

homemade pizza with peppers and mushrooms

This was our second venture into making homemade gluten free pizza crust and my oh my was this amazing! This pie was made with the New York style crust (the quick version) and I can barely explain how delicious it turned out to be. We can’t wait to make it again! Smoked salmon bowl with crispy chickpeas and radishes

This is a meal we turn to whenever we want something that’s semi-homemade and very filling. The original recipe, from the book Cook90, calls for leftover cooked salmon, but I much prefer it with smoked salmon instead. Also, we choose to crisp the chickpeas stovetop in (a lot of) olive oil. Such a great dish! Works well for lunch, too. ;)

crispy chicken nugget spinach salad

Craving chicken nuggets, but want to keep things healthy? Bake them! And then add that chicken to a spinach salad with avocado and peppers (use a dressing of your choice). Ta da! Healthy, and delicious, weeknight dinner. Be sure to use our favorite Aleia’s GF breadcrumbs.

panko-crusted cod with baked potato and beans

There comes a time when you are making pan-fried fish for dinner and are unable to determine the best side dish so you just make a giant baked potato and call it a day. Honestly, this dinner was awesome and felt very “full” since it included the potato and green beans. A complete, square meal; right? Be sure to use Aleia’s GF panko breadcrumbs order the fish (Naked Cod) from North Coast Seafoods.

red curry chicken meatballs and delicata squash

This dinner unintentionally was all one color on the plate. However, I’d strongly recommend making meatballs to go alongside your roasted Delicata squash (which is surprisingly sweet). These meatballs were marvelous and included red curry paste; a delicious twist!

chicken sausage and cauliflower pasta

For a twist on our favorite sausage-and-veggie-pasta, we tried chicken soup sausage from the brand Seemore Meats and Veggies and omg it was excellent! This sauce-less dish included roasted cauliflower, plenty of garlic, and our favorite gluten free fusilli. The star of the meal, of course, was the Seemore chicken soup sausage.

arugula and brown rice salad with broccoli and sausage

The best way to “plump up” a salad is to mix all of the salad ingredients with your grain of choice. For this one, arugula with roasted broccoli and (another) pack of Seemore sausages, we tossed it all with cooked brown rice for a really filling, and scrumptious, dinner. The sausage used in this dish was broccoli melt - yum!

sticky ginger scallion meatballs

This is a dinner we’ve now made twice in a fairly short period of time so you know it’s a great one. Perfect for weeknights or an easy weekend special, these meatballs are packed with flavor and couldn’t be simpler to prepare. We made extra this time around so we were guaranteed leftovers. Rice noodles with pork, mushrooms, and scallions

When in doubt, make a stir-fry for dinner. They are always awesome and often require very few ingredients to make something delicious. Conveniently, we had everything necessary to make this great dish from one of my favorite cookbooks, Weeknight Gluten Free by Kristine Kidd. We followed the recipe as written, but added extra chili garlic sauce for an extra spicy kick. :)

panko-crusted chicken cutlets

While we also made roasted sweet potatoes for this meal, they were not quite ready at photo time. So here is the chicken! Large, crispy chicken cutlets are a great meal, but what took this over the top was my last-minute creation of an awesome yogurt dipping sauce. Mix together one cup greek yogurt, about one tablespoon of olive oil, some salt and pepper, and a couple teaspoons of dried chives. Ta da! A delicious sauce (served on the side) for crispy chicken.

turkey and white bean chili

I must admit we’ve made this delicious, healthy chili several times over the last several years. It’s just that good! A hearty chili that comes together in well under an hour?! Too good to be true. Just make sure you’ve got all of the garnishes ready to go: cilantro, avocado, and chopped red onion really take this dinner over the top. Recipe is from the wonderful Weeknight Gluten Free by Kristine Kidd.

TURKEY Meat-sAuce aNd cassava spaghetti

The end of this month brought some very chilly nights which meant it was time for meat-sauce! We kept it light with ground turkey and grain-free by using Jovial Foods’ cassava spaghetti. Have you tried it yet? It’s one of my new favorite pastas! Don’t forget to top your bowl with plenty of shaved parmesan. ;)

ROASTED CAULIFLOWER AND CHICKPEA SALAD

Another great way to enjoy roasted cauliflower is to include it in a salad. We created a meatless meal (salad) that featured roasted cauliflower, crispy chickpeas, roasted sweet potato, and leafy greens. A light, healthy dinner that came together quickly, but still offered plenty of nutrition and good flavor. Add your salad dressing of choice to round it out! For ours, we made a simple balsamic vinaigrette.
