Crispy and Fluffy Roasted Potato Cubes
This recipe for roasted potato cubes is naturally gluten free and dairy free. If you’re looking to add a more-fun version of baked potatoes to your dinner, then make these delicious roasted potato cubes.
They cook much more quickly than a whole potato and their flavor and texture is unmatched. Not only are they a great side dish for your main course, I’d also recommend whipping up a batch of these potatoes for your next movie night on the couch.
Sure, popcorn is great, but what about a bowl of piping hot roasted potato cubes? I’d recommend serving with ketchup, homemade spicy mayo, or another to-be-created dipping sauce.
While we love baked potatoes, we don’t always love how long they require cooking in the oven. So in an effort to speed up the cooking time, and increase the fun-factor, we decided to cut up the potatoes, soak them in water before baking, and then toss them simply in olive oil, salt, and pepper.
The result is a potato “cube” that’s crispy on the outside and light and fluffy on the inside. They could possibly be just as amazing as potato chips. Or maybe even more…
Crispy and Fluffy Roasted Potato Cubes

Servings: Two to four
Time: One hour
Ingredients
2 Russet or Yukon Gold Potatoes (add more for a larger batch)
Olive oil
Salt and Pepper
Preparation
Cut potatoes into 1-inch cubes (cut into quarters the long way, then slice)
Preheat the oven to 425F with the rack positioned in the middle.
Soak potatoes in cold water for 20-30 minutes.
Dry the potato cubes with a paper towel then toss in a couple of tablespoons of olive oil, a teaspoon of salt, and a few grinds of pepper (if you want to add another flavor like Cajun spice, do so here).
Spread potatoes in a single layer on a parchment lined baking sheet and bake for 20-23 minutes.
Switch oven to broil and broil until the tops of the potatoes are nicely browned (about 3 minutes in our oven).
