Italian Turkey Meatballs

One of the best comfort foods is meatballs. There, I said it. And I fully believe it. Meatballs are an unsung hero of weeknight dinners and I simply love them. There are countless ways to prepare meatballs, but one of the best will always be Italian-style meatballs. We’ve been making them with ground turkey for a lighter flavor and they come out just scrumptious.
I love serving them with homemade tomato sauce (or your favorite brand in a jar) and gluten free spaghetti for a very “cozy” Friday night dinner. However, let’s keep it real: meatballs are great any night of the week.
Italian Turkey Meatballs
Recipe by Seth Drury
Servings: Two to Four (or two with leftovers)
Time: Approximately thirty minutes
Ingredients
½ cup Aleia’s Gluten Free Italian Breadcrumbs
2 tablespoons milk
1 egg lightly beaten
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon dried oregano
½ teaspoon garlic powder
1-pound ground turkey
Preparation
Preheat oven to 425F with the rack in the middle.
In a large bowl mix the breadcrumbs and milk until all the milk is soaked up, then let sit for 5 minutes.
Mix in beaten egg and seasoning, then add the turkey and gently combine the mixture with your hands (be careful not to over mix, as this will make for tough meatballs).
Form the mixture into about 16 balls a little smaller than a golf ball and place on a parchment lined rimmed baking sheet.
Bake for 15 minutes, then broil until the tops are nicely browned (about 2-3 minutes with our broiler).
Note: We served our meatballs over Jovial Foods gluten free brown rice pasta with a tomato sauce consisting of Rao’s Basil Marinara mixed into sautéed garlic and onion and garnished with a little fresh basil and (a lot of) Parmesan.
