An eclectic, delicious mix. I mean dinners. Before Thanksgiving.

There are some weeks that just won’t allow for a full set of elaborate meals. This week was one of them and yet it resulted in finding two awesome dinners I wasn’t expecting. Yay! And allowed for a night of true relaxation in the form of frozen food. Did I mention Thanksgiving is next week? I know. My baking brain is swirling, too.

Let’s get to the meals, shall we? They were all quite yummy.

Feel Good Foods Vegetable Potstickers and Chicken Egg Rolls

Whether it’s a busy day or a packed weekend, sometimes you just need dinner to come from the freezer. And while I don’t condone eating frozen food all of the time, I do strongly suggest stocking your freezer with Feel Good Foods snacks because they’re awesome, delicious, and perfect for the nights when you need them. All of their snacks are gluten free, healthy, and honestly super quick to prepare.

I had the egg rolls cooking in the convection oven as I watched the potstickers simmer on the stovetop. Under 30 minutes later I was sitting at the table and ready to dig in! The veggie potstickers are beyond yummy and I have no shame in admitting I ate the entire package. 😏 The chicken egg rolls (also available as veggie) are a great complement to the potstickers, but also perfect on their own. I treat them as an appetizer, side dish, or their own meal depending on my hunger needs. ;)

This dinner was quick and easy which is exactly what I needed while Seth was traveling for work. If you didn’t know, he’s the chef around here! My baking skills far outweigh my cooking prowess; I am forever grateful he loves to make our dinner. But I am overjoyed that Feel Good Foods products exist for when he’s not around - or when we both need a night off.

Note: the potstickers come packaged with a small container of sauce! It’s great, but I recommend enhancing it with extra GF soy sauce and chili garlic sauce for some spice. It’s a little “cooking” that even I can handle. ;)

Once Seth returned from his trip, I rejoiced! And then we got back to cooking. Since we had not meal planned this week (what?!) we had to improvise on what we had available in the fridge. Fear not! An awesome dinner was made and devoured.

Sweet potatoes are the ultimate extra for dinner. They enhance everything! And stuffed sweet potatoes are my new favorite. A basic sweet potato is delicious with salt and butter (I’m not a fool), but they’re pretty awesome when filled with a lime crema and a ground meat of your choice.

For this particular occasion, we seasoned the ground chicken with plenty of fresh ginger, garlic, cilantro, and fish sauce. A slight angle toward Vietnamese flavors, which I love. Don’t be a skeptic! These flavors worked wonderfully in a roasted sweet potato. And that lime crema was the perfect accent.

Trust me on this one: stuffed sweet potatoes are about to be your new, favorite weeknight meal. So versatile! So delicious! Almost as easy as meatballs. Almost. 😉

Better Than Takeout Dan Dan Noodles

Stop what you’re doing and save this recipe. It makes a dinner that’s scrumptious and hearty and amazing. Perfect for cold nights or when you’re just craving noodles (always).

I love that this was a layered dish: the bottom of the bowl is filled with a savory, spinach-filled broth, then you add a healthy heap of rice noodles, stir them around so they get “souped,” and then top it with a crispy mix of mushrooms and pork. And then! You top it all with divine chili garlic oil (homemade) that you’ll want to eat with a spoon, but shouldn’t. Because it’s oil.

Once your artful bowl of soup, noodles, pork, and chili oil is complete, it’s time to eat! I made the mistake of not wearing stretchy pants for this meal and I regret still to this day. We couldn’t bother talking during dinner because it was just that good. And it was definitely better than takeout; by a mile.

Without a doubt we will be making this dish again. Perfect for the coming winter months and just delightful after a long day. It came together fairly quickly so don’t write it off for the weekend. Make it on a Wednesday and swoon over the leftovers (if they exist) on Thursday. 😎
