Gluten Free Mollie D Valentine’s Day Trio: Part II

It’s time to bake!

Whether it’s for Valentine’s Day, Galentine’s Day, or just a day to show someone you care, here are my favorite sweets to bake. And while they lean toward the quintessential cookie, my personal favorite, they all take the cake. So go ahead, let’s bake. 😉💕

For all of these treats, I recommend baking with Cup4Cup Multipurpose Gluten Free Flour. And for all cookies, I recommend using Guittard Chocolate Company chips and baking bars. High-quality ingredients always yield the most-delicious results. 💕

Below, my favorite sweet treats to bake for those you care about most:

Pan-Banging Chocolate Chip Cookies

Not the fastest recipe, but the effort is worth it: this delicious cookie has crisp edges, a chewy center, and the “pan-banging” cooking method is perfect to get out any angst you may happen to have. Plus, that’s what makes the ripples throughout each cookie. These are decadent and divine.

Salted Butter Chocolate Chunk Shortbread

An internet favorite (the recipe went viral) for good reason: this shortbread cookie is ridiculously easy to make, super delicious, and while you do need time for the dough to chill, the total time for making them isn’t that bad. These cookies are an office favorite as well - be sure to make an extra batch for your co-workers! They’re not too big either so go ahead and have a few. ;)

Salted Chocolate Chunk Cookies

One of my favorite cookie recipes because they taste as if far more effort and time was required. No dough-chilling or waiting necessary, you can bake these off shortly before gifting them away. Or make them for a galentine’s dinner - your friends will adore, and inhale, each and every cookie.

Creme Fraiche Chocolate Chunk Cookies

Another recipe that requires a little more effort and elbow grease, but it’s totally worth it. These creamy, dreamy cookies are soft and chewy and giant! Make a batch and give a couple to each person you know who needs a dose of sweetness. They’re ridiculously delicious; I’d recommend saving the recipe for year-round access.

Cream Cheese Danish (purchase Sarah Kieffer’s cookbook for the full recipe)

In case you just can’t cookie, and want a big project, impress your loved ones with a fancy-pants homemade cheese danish! This is a project, and yields a small number of treats, but it’s well-worth the time and effort since they’re so delicious and your family and friends will be so pleased. And impressed!

Brown Butter Buttermilk Cake (recipe available in Alison’s Roman’s Dining In)

Maybe you prefer a cake to bake? Well let me introduce this easy, scrumptious, low-key stunner. This is a cake that tastes like a doughnut and no one will be mad about that. It’s a terrific balance of sweet and slightly savory; it tastes like an old-fashion doughnut, but with a snazzy frosting. Bring this cake to a party or gift it to a family who loves a great slice (of cake).

Levain Bakery-style Chocolate Chip Cookies

Finally, I recommend making this monster-size cookie because nothing says “I love you” quite like a homemade, gargantuan chocolate chip cookie that’s crisp on the outside and ridiculously gooey on the inside. Once again, not the quickest process, but sometimes it’s worth the time and effort to make something amazing. And delicious.

There are countless ways to show someone you care. Bake a cookie, bake a cake, buy a cookie, order a cake. If you bake, then great! But if you choose to forgo the mixer and dirty dishes (don’t worry!
